Again With the Lemon Curd

So there was this bowl of lemons on the counter, and there was a favorite lemon curd recipe in the binder. What's a girl to do during her free afternoon with a combination like that? Make lemon curd!

Here is the recipe. It has been shared before but definitely worth sharing again.

3 medium lemons
5 large eggs
8 T. butter
1 C. Sugar

Blend ingredients together in a blender. Cook and stir over low heat 10 minutes or until thickened. Put in jar and store in refrigerator.
