Quick and Easy Pasta
Good Afternoon!
On this beautiful Autumn afternoon, we have a recipe to share. The quick cooking time and light, fresh taste make it the perfect go-to dish on busy days. Recommended accompaniments are crusty bread and tossed salad.
2 small red onions sliced
3 T. butter
1/2 gallon frozen mixed veggies(recipe was tested using zucchini, yellow squash, red and green peppers)
1 can of diced tomatoes (undrained)
salt and pepper
small pkg. of pasta (recipe tested with spaghetti)
parmesan cheese
*Cook pasta according to directions, drain, and set aside or use pasta cooked ahead of time for freezer. Pasta from an earlier meal would work also.
*Saute onion in butter
*Add vegetable mix
*Reduce heat and cover pan
*Cook over low heat approx. 15-20 minutes stirring occasionally (if crisp tender veggies are desired, cooking time will need to be decreased)
*Add tomatoes
*Stir in and heat through
*Season to taste
*Serve over pasta
*Sprinkle with Parmesan cheese
