Using Green Tomatoes

The first hard frost has come and gone. Our counter is filled with green tomatoes attempting to ripen. Many of them will rot if we don't find an alternative use. Not wanting our harvest to spoil, I went on a search for recipes using green tomatoes. Here is one of the yummiest I found. It is a cake very similar to a spice cake. 4 C. chopped green tomatoes 1 T. salt 1/2 C. butter 2 C. white sugar 2 C. all-purpose flour 1 t. ground cinnamon 1 t. ground nutmeg 1 t. baking soda 1/4 t. salt 1/2 C. raisins 1/2 C. chopped walnuts Place chopped tomatoes in bowl and sprinkle with 1 T. salt. After ten minutes, place tomatoes in colander and rinse with cold water, drain. Preheat oven to 350 degrees. Grease and flour 9x13 baking pan. Cream butter and sugar. Add eggs and beat until creamy. Sift flour, cinnamon, nutmeg, soda and 1/4 t. salt. Add raisins and nuts and then add dry mixture to creamed mixture. Batter will be very stiff. Mix well. Add drained tomatoes mixing well. Pour into prepared 9x13 pan. Bake for 40-45 minutes or until toothpick inserted in center comes out clean. * we used half the amount of nutmeg called for and really like that ratio of spices. We also increased the cinnamon just a tad. Cake can be sprinkled with powdered sugar or frosted with a cream cheese frosting. We frosted ours with a caramel frosting. It was delish!
